Pesto with Mushrooms and Truffles

The Mushroom and Truffle Pesto combines mushrooms, walnuts, mature cheeses and truffle in a creamy preparation with an intense, distinctly earthy flavour. The mushroom base gives the recipe body, whilst the walnuts add texture and the cheeses enhance the savoury and aromatic profile.

It can be used directly on pasta, tossed with penne, fusilli or tagliatelle whilst still hot, or added to a risotto to intensify the flavour of the mushrooms. It also works well as a base for bruschetta, a side dish for grilled meats, or a complement to mashed potatoes and roasted vegetables.

Its texture means it can be used both as a sauce and as a condiment. A small amount is enough to finish off simple dishes; it can be thinned with a little of the pasta cooking water, olive oil or cream, depending on the recipe.

Produced in Italy, it comes in a 135 g jar. Once opened, it should be kept in the fridge and consumed in accordance with the instructions on the packaging.
